I got rid of everything but the items with corn syrup because we do not have any access to Kosher for Passover food and that left even less to eat. My little kids (1 & 2 yrs old) are going to have a VERY long week without Mac & Cheese. The older kids can survive on meat, fruit and veggies. It will be interesting to see how the babies do because they hate meat and only seem to want to eat fruit rather than veggies.
How much de-leavening to you do? What fave foods/ dishes do you like to eat this week?
My family has never done more than set aside a cabinet for Passover stuff. This year I did a little more-- I cleaned out the pantry and put the chametz in a big plastic bin in another room. I don't bother making sure things say "kosher for Passover"; I just look at ingredients. Also, I am Sephardic, so I can eat legumes, rice, and corn. Thank goodness, because we are vegetarian, and if we were Ashkenazi I don't know what we'd eat!
My kids' favorite foods are pizza, pasta, and bread, but they have done remarkably well without those items! We've been eating lots of matzah with butter, cream cheese, hummus, or charoset; matzah ball soup; matzah lasagne (lasagne with matzah instead of lasagne noodles; macaroons; jell rings; chocolate covered matzah (yes, this has been a junk food week); salad (me and dh, the kids don't like it); tofu; matzah brei; ungefrishked matzah (this is a family dish and I doubt anyone's heard of it. You run a sheet of matzah under water, steam it atop a saucepan of boiling water until soft, slather butter on it, and sprinkle a little salt. Delish!); random veggies and fruits. Right now we're having matzah meal-ricotta pancakes that I adapted from a recipe online. Pretty good!
We also eat rice & beans. I got rid of everything else except the foods with corn syrup and vinegar. That would have eliminated so much more. I am glad to hear that someone else is eating a lot of junk because I thought it was only our family. Matza pizza has been a big hit this year as well as matza with pb & j. My little ones are hating this week since they detest meat and so far they are living on cheese, yogurt, matza pancakes, and chicken franks.
I am not a huge cook so I am feeling very exhausted from cooking so much every day. I make large amounts so we have leftovers for the kids to take to school the next day. I must say that I am impressed with how little whining there is this year about the food choices--maybe they are loading up on the junk too.
Last day today....
I promised after today we would go to the dollar movie and have POPCORN!!!
We have done great! JUst lots of fish, meat, chicken, veggies. No pasta, corn, beans, rice, bread, basically no junk food.. Been hitting the water big time this time. Have learned to go without corn syrup products this year.
Little one does not mind, but i know she's jonezing for some juicey juice and regular cereal.
We did not go out and contribute to the whole kosher high market priced items.. Just bought 10 lbs of matzah, and made matzoh meal , and farfel out of that. Didn't make any cakes or waffels or pancakes, just kept it clean.
Lox for breakfast on passover bagels, lots of passover granola, and matzah toffee...
Still have the cupboard locked for chametz, she can't wait to unlock it tonight.
got alot of help from this website www.cookingandmore.com I attended one of her cooking classes before passover and enjoyed it tremendously.
